Here’s a faaaabulous way to use up the leftover sour cream from your Cinco de Mayo party yesterday.
Melt some chocolate chips in the microwave. Stir in some sour cream. It makes the BEST chocolate icing! It’s really smooth and looks almost glassy.
If you need it in recipe form, here ya go:
“Some” chocolate chips – melt in microwave
“Some” sour cream – stir into melted chocolate
1 Cup Greek yogurt (I used blended)
2 Large eggs
1 Cup rolled oats
Put in blender. Push button. Pour on griddle!

PS – if you like a thinner pancake, just add a splash of milk.
PPS – they hold fruit really well. I added blueberries and nanners.
